Ingredients:
Salad:
2 large cucumbers, quartered, seeded and sliced (about 2 cups)
1/4 cup cilantro, chopped
1 cup of shallots, minced
1/4 cup of coconut flakes (optional)
Dressing:
about 1/4 cup fish sauce
3 tablespoons lime juice
about 2 tablespoon rice vinegar
about 1 tablespoon of palm sugar (white sugar is OK, reduce to 1/2 tablespoon)
